I am a sucker for baked goods. And I love a muffin or slice of loaf for breakfast. But the kind that you grab on the way to work can be so unhealthy! Not to mention the amount of money you spend if you grab one every day! When I have time, I love to bake. And this weekend, I was blessed with the time to make some Zucchini Loaf. I purchased a zucchini at Food Basics for 57 cents. The best part? We have breakfast for the week
3 cups flour
1 tsp baking soda
1 tsp baking powder
2 tsp ground cinnamon
½ cup olive oil
1 tsp lemon rind (can use lime or orange as well)
2 tsp vanilla extract
1 ½ cups sugar
3 cups shredded zucchini
Preheat oven to 355˚. Spray two loaf pans with non-stick cooking spray.
Combine the dry ingredients in a large bowl.
In a separate bowl combine the eggs, oil, lemon rind, vanilla extract and sugar. When well combined, add the zucchini and stir until well combined.
Add the flour mixture to the wet ingredients and stir until just combined. Be sure not to over mix.
Divide the mixture between the two loaf pans. Bake for 1 hour or until a toothpick inserted comes out clean.
