My Dad’s garden is where I do most of my shopping right now for veggies. And the zucchinis are so tasty! If you don’t have the luxury of your own garden, you can pick up local zucchinis at markets all over Ontario right now! It’s zucchini season!
Zucchini and Chicken Pasta
2 tbsp butter or margarine
1 small onion, finely chopped
1 clove minced garlic
2 tbsp flour
1 cup chicken or vegetable broth
½ cup milk
½ cup sour cream
½ cup grated parmesan plus extra for topping
2 cups grilled chicken, chopped
1 cup grilled zucchini (brush with olive oil and grill on medium for approximately 10 min. or until soft)
1 cup frozen peas
1 box of your favorite pasta (I really like tri-colour spirals with this recipe)
In a large skillet, melt the butter or margarine and cook the onion until soft. Add the garlic clove and cook for another minute or so. Add the flour and stir until it becomes paste-like. Pour in the milk and sour cream and whisk until the sauce thickens. Stir in chicken, zucchini and peas.
Meanwhile, cook the pasta according to package directions. Drain the pasta when cooked and return to the pot.
Add the chicken and sauce mixture to the pasta and toss. Dish up and top with shredded parmesan.
