I often hear from friends how lucky I am to have a husband who loves to cook. My husband is always experimenting in the kitchen and this recipe is all his! I am a huge soup fan and this recipe makes for an easy dinner when paired with a yummy grilled cheese and avocado or a ham and swiss sandwich! This particular recipe allows for you to play with it as well. The
amount of broccoli and cheese you use depends on how intense you want the flavour of the broccoli and how thick you want the soup.
Ingredients:Broccoli and Cheddar Soup
2 tablespoons butter
- ½ onion chopped
- 1 clove of garlic pressed
- 4 to 6 cups broccoli
- 6 cups low sodium chicken broth
- 1-2 cups grated cheddar cheese
- Salt and pepper to taste
Directions:
Melt 2 tbsp butter in a skillet over medium heat. Add the onion and garlic, stirring consistently until soft. Set aside.
In the meantime, boil the chicken broth in a pot. Once boiled add the broccoli, onion and garlic and stir together. Cook until broccoli is soft. Pour in portions into a blender or food processor and blend smooth.
Replace the pureed mixture back into the pot and bring to a boil. Add the cheese, salt and pepper and stir until the cheese is melted.
Spoon, serve and enjoy!
